I grew the quotes to eat almost on a daily base, so they have a special place in my heart. Growing up in Iraq after the first war and duration of the Gulf, the time that the UN Impossible International Sanctions that paralyzed the Financial Country, things like the treats and snacks became a luxury and it is not something that we enjoy regularly. I’ve always had a sweetness, as special as a child. Since the dates were cultivated abundantly in Iraq, they became our ‘sweet gift’ that we could expect.
Only since I started this blog, I thought about baking with dates or using them as an alternative to white sugar. They do not work in all recipes, but they work very well in some baked products such as this healthy date and walnut cake.
I will not lie, it can be a fight that balances the taste and texture when trying healthier recipes. Special when it comes to baked products. I still receive comments every time I publish a recipe asking whether the oil or the sweetener can be omitted, but the truth of the matter is when it comes to desserts, you still need to add some fat and sugar to have a good taste. It makes no sense to do something that does not have a good flavor or does not enjoy the texture of just being as healthy as possible. I don’t know about you, but still because to enjoy my food!

I exceeded mine with a simple drizzle of 2 ingredients, but this is completely optional and can beyond.

Dates – I like to wear Palestine Medjol dates. They add natural sweetness and stickiness without depending on too much refined aggregate sugars. You can wear soft dates. If you only have dry dates that you do to soak them for longer or add more milk.
Dazzle -A type of milk will work dairy or dairy alternatives.
Oatmeal – I find that oatmeal is a great alternative to regular flour in the oven. Add more fiber and nutrients without affecting the texture too much. I make my own oatmeal mixing smooth oatmeal in a fine flour in a high speed blender. Be sure to use gluten -free oats if you need the recipe to be gluten free.
Tahini – To add some wealth and reduce the amount of butter/oil I need to use. Always use this Lebanese Tahini, since it has the best flavor and texture.
Oil – I added some neutral oil to help add more moisture and hold the battery while baking in the oven.
Salt and baking powder – To improve flavors and help the cake increase.
Nut – I think the nuts are going very well with the dates! You can replace it with other nuts if you prefer or omit completely for a recipe without utility.
How to make this healthy appointment and walnut cake:

Preheat the oven to the fan of 180c/160c/350f.

Pour the milk into a hot saucepan until it begins to bubble, remove the heat before it begins to boil.

Add the dates to a heat -proof bowl and pour over hot milk. Leave to soak up for 30 minutes.

Add the date of date and milk to a liquering/food processor and mix with a soft.

Pour into a bowl along with tahini and oil. Mix to combine.

Add oats, baking powder, cinnamon and salt. Mix until you have a soft battery.

Transfer to an 8 × 8 square cake with parchment paper and sprinkle the chopped nuts at the top.

Bake for 40-45 minutes or until a clean skewer placed in the middle is clean.

- 220g soft dates I use thesis dates
- 320 ml Choice milk
- 4 Tablespoon Tahini I use this brand
- 4 Tablespoon neutral oil
- 150 g Oatmeal
- 2 Teaspoonful baking powder
- 2 Teaspoonful cinnamon
- 1/2 Teaspoonful Salt
- 40 g nut rough
Date Tahini Llovizna
- 2 Tablespoon Tahini
- 1 Teaspoonful Date syrup
